Pastrami White Bean Soup

A Simple, Warming Soup with Great Depth of Flavor

This simple, warming soup comes together quickly and leans on the pastrami to create a great depth of flavor. This is a flexible recipe so add more vegetables or your preferred seasonings as it suits your taste! For the Rueben lovers, we recommend a topper of sauerkraut and Swiss cheese.

Ingredients

  • 1 1/2 tablespoons extra virgin olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and minced
  • 4 stalks celery, chopped
  • Salt and pepper
  • 1 qt. North 44 Farm Beef & Mushroom Bone Broth
  • 2 cups white beans, soaked
  • 1 packages North 44 Farm pastrami, chopped
  • 2 bay leaves
  • 1/2 cup heavy cream

Cooking Directions

  1. Place the oil in a large pan and cook the onions and garlic until the onions are translucent. Then, add the carrots, celery, salt and pepper, and cook until celery has softened slightly.
  2. Place the vegetable mixture into the slow cooker along with bone broth, beans, and pastrami. Add water or more bone broth if needed to ensure all ingredients are just slightly covered by liquid.
  3. Cook on high for 8 hours.
  4. When ready to serve, pour in the heavy cream to finish. Taste and season with salt and pepper as needed.
