The chuck eye is the continuation of the rib eye into the chuck primal which essentially means it's the tail-end of the rib eye. The chuck eye steak is often called the Rancher's Steak or a Poor Man's Rib eye. You will find this cut has similar qualities to a rib eye by means of fat and flavor, it does have a bit more chew due to being part of the chuck, and is a great quick-cooking steak we know you'll love. Our grass fed and finished chuck eyes are individually packed, cut to 1 inch thickness, and come in the following sizes:
